# How To Make It:

05 - Reduce heat to a simmer. Add halved cherry tomatoes if using and cook for 10 minutes until vegetables are tender.
06 - Add spiralized zucchini noodles and baby spinach. Simmer for 3-4 minutes until zucchini noodles are tender but retain slight firmness.
07 - Stir in fresh lemon juice. Taste and adjust seasoning with additional salt and pepper as needed.
08 - Ladle soup into bowls and garnish with fresh chopped parsley. Serve immediately while hot.
